Using Kajun King Fresh Sausge Mixes gives you the flavor, quick and easy.
Serve for breakfast, or with Buttered Noodles,
for quick lunch or dinner.
Ingredients:
3-4 lbs. Pork shoulder (you could use ground pork, if you have no grinder, for patties)
1-2 lbs. Potatoes ( total of 5 lbs. meat and potatoes )
1 pac Kajun King Breakfast Sausage mix ( 1 pac for 5 lbs. seasonings mix )
wax paper
cookie sheet
meat grinder
Procedure:
Cook, washed potatoes (no need to skin) till almost done about 15 minutes
dice into 3/4 inch cubes let them get cold in the fridge
cut Pork shoulder into 1 inch cubes keeping cold
combine cold cooked Potatoes with cubed Pork and Kajun King Breakfast Sausage Mix
mix well and refrigerate for an hour to overnight
run through a grinder, with medium, to course plate, mix again thoroughly
keep meat mixture cold
Form into patties about 3 in. in diameter.
and fry patties as needed.
May be frozen and used as fresh later.

Try also other suggestions below:
Skinless Sausage:
put sausage stuffer reducer on grinder (casing not needed)
reducer may be 3/4 inch for link style sausage size
put wax paper on cookie sheet
grind meat mixture through reducer making sausage length, up to width of cookie sheet
carefully place each sausage length next to each other to maintain round shape
fry in skillet and roll to maintain round shape
Freeze separated on sheet, and when frozen bag and use as need.
No need to thaw fry at medium heat.
May be fried a little, then stored covered in fridge, for up to 7 days, to maintain shape and cut down on frying time later..
Hand Rolled Sausage:
Divide the sausage meat into usable sections, about the size of a tennis ball.
Roll each meatball between your hands to form sausage roll.
Place sausage roll on lightly floured counter top, and with both hands roll back and forth.
When rolled sausage is at desired thickness, cut into manageable sections.
Fry or freeze as needed.
